Just a quick post, in light of Shrove Tuesday (pancake day) which we celebrated a day late as I was ill yesterday. Any way, had to share this recipe!
1 cup Gram flour
1 cup Doves Farm Gluten Free plain flour
1 tablespoon of gluten free baking powder (not soda)
1 tsp salt
100g dark chocolate chips
1tsp white or apple cider vinegar
1 and a half cups water
To top
1 can coconut cream
1 tablespoon icing sugar
Maple syrup
Mix together the dry ingredients then stir in the wet ingredients. Shallow fry in a little oil until bubbles start to appear, then flip and fry till lightly golden.
Scoop the cream from the top of the can of coconut cream, trying not to get any of the water mixed in. Whisk together with the icing sugar. Top your pancake with maple syrup and a spoonful of the coconut whipped cream.
Devour!

Frozen Cake
Hope everyone is having a happy and productive January. I've been hard at work on my first Frozen Cake for a friend of mine that has had cakes from me for both of her children since they were one. It's become a bit of a tradition! Originally I was thinking, blue and snow flakes and sugar shards, etc but when I had a look on the internet at other designs I decided that too many people had had the same idea. So I decided to do something a little different....
Admittedly the edible silver leaf may have been a little indulgent for a child's Birthday ;)
I've done a little video tutorial on how I ganached this cake which will be available free on Youtube. Just as soon as I get round to editing out the boring bits and the arguments with my kids!
